Two architectures, not one product category
“Privacy-focused food safety monitoring” describes two fundamentally different systems that happen to share a shelf. The distinction matters because it decides whether privacy is something you mitigate or something you never create.
Camera-based systems apply computer vision to kitchen footage and infer behaviour: whether headwear and gloves are worn, whether handwashing happened, whether raw and ready-to-eat products were handled in sequence. Vendors reduce exposure by blurring faces, processing on the premises rather than in the cloud, or shortening retention. The footage still exists at the moment of capture, and staff know it.
Sensor-based systems never observe a person. They measure the conditions under which food becomes unsafe: refrigeration, freezer and hot-holding temperature, continuously and unattended. WOLKIS is a sensor-based system. There is no image, no video and no audio anywhere in the chain, so there is no footage to blur, retain or explain to staff.

What a temperature-based record physically contains
Each entry is a reading, a timestamp and the identifier of the equipment it came from. That is the whole record. No name, no face, no voice, no location of a person. WOLKIS stores these rows so that each is sealed at the moment of capture, which is what makes the log usable as evidence rather than as a claim.
The practical consequence is unglamorous and important: the log can be exported and handed over without a redaction step, because there is nothing in it to redact.
What this changes for the operator
A system that records identifiable people brings the business into scope as a controller of personal data under the UAE personal data protection framework, with the notice, consent, retention and access duties that follow — and those duties sit with the restaurant, not with the vendor who sold the cameras. Equipment temperature readings are not personal data, so a sensor-only deployment does not create that scope in the first place. WOLKIS is deployed specifically to keep kitchens out of that scope while still producing the compliance record. Where cameras are the better tool — said plainly
A temperature probe cannot see a cook skip handwashing, wear the wrong headgear or cut raw chicken on the salad board. Computer vision can, and if human behaviour is the failure mode that keeps costing you inspections, that is the tool for it. WOLKIS does not replace behavioural monitoring and does not claim to. The two systems address different failure modes, and a multi-site operator may reasonably run both — sensors for the conditions, cameras for the conduct.
What sensors do that cameras structurally cannot: hold the record for the 3 a.m. compressor failure, the weekend the kitchen was closed, and the four hours between the last manual check and the first one of the next shift. Those are the hours where handwritten logs are invented and where product is actually lost.
The obligation this has to satisfy
UAE food businesses are required to implement and document control of food safety hazards — Federal Law No. 10 of 2015 at federal level, and the Dubai Food Code for establishments in Dubai. Temperature is the measurable core of that duty, and it is the part a paper log reliably fails: night shifts get skipped, entries get written in batches, and an inspector can tell. WOLKIS generates that temperature log continuously, including the hours nobody is in the building, and renders it as the report the authority asks for.
Choosing between them
- You need a defensible temperature record and want no privacy conversation with staff → sensor-based monitoring. This is WOLKIS.
- Your recurring failures are behavioural → computer vision, with the data-protection work that comes with it.
- You run many sites and both problems are real → both, but keep them separate: the temperature record is the one an inspector asks for first.
