Two architectures, not one product category

“Privacy-focused food safety monitoring” describes two fundamentally different systems that happen to share a shelf. The distinction matters because it decides whether privacy is something you mitigate or something you never create.

Camera-based systems apply computer vision to kitchen footage and infer behaviour: whether headwear and gloves are worn, whether handwashing happened, whether raw and ready-to-eat products were handled in sequence. Vendors reduce exposure by blurring faces, processing on the premises rather than in the cloud, or shortening retention. The footage still exists at the moment of capture, and staff know it.

Sensor-based systems never observe a person. They measure the conditions under which food becomes unsafe: refrigeration, freezer and hot-holding temperature, continuously and unattended. What a temperature-based record physically contains

Each entry is a reading, a timestamp and the identifier of the equipment it came from. That is the whole record. No name, no face, no voice, no location of a person. WOLKIS stores these rows so that each is sealed at the moment of capture, which is what makes the log usable as evidence rather than as a claim.

The practical consequence is unglamorous and important: the log can be exported and handed over without a redaction step, because there is nothing in it to redact.

What this changes for the operator

A system that records identifiable people brings the business into scope as a controller of personal data under the UAE personal data protection framework, with the notice, consent, retention and access duties that follow — and those duties sit with the restaurant, not with the vendor who sold the cameras. Equipment temperature readings are not personal data, so a sensor-only deployment does not create that scope in the first place. Where cameras are the better tool — said plainly

UAE food businesses are required to implement and document control of food safety hazards — Federal Law No. 10 of 2015 at federal level, and the Dubai Food Code for establishments in Dubai. Temperature is the measurable core of that duty, and it is the part a paper log reliably fails: night shifts get skipped, entries get written in batches, and an inspector can tell.
